Perfect Popovers

Gosh, did it get cold fast!  On blistering cold days like this, I love me some warm breakfast!  One of my favorite breakfast items is freshly baked popovers.  Warm, light, and airy, this recipe is hands-down, my go-to recipe for Perfect Popovers.  You only need five ingredients that are sure to be in your cupboard: flour, eggs, milk, butter, and salt. Plus, this no mess, no fuss recipe comes out perfect each and every time.  Devour your freshly baked popovers straight out of the oven and top it off with some strawberry butter for a fabulous treat.  Recipe courtesy of AllRecipes.com.

Ingredients
2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt
2 Tablespoons of butter, melted

Directions
Preheat oven to 450 degrees F.  With the melted butter, generously grease six popover wells. 
In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill each well 1/2 full.
Bake at 450 degrees F 20 minutes. Decrease oven temperature to 350 degrees F and bake for another 20 minutes. Immediately remove from cups and serve piping hot.
Whisk eggs lightly.
Add flour.
Add salt.
Add milk.
 Mix until just combined.  Do not overmix.  Overmixing will prevent the popovers from rising as much as they should.
Your batter should look like this.  If you have small lumps in the batter, it's okay.  Just leave them be.
I used a popover pan.  If you don't have one of these, you can also use a regular muffin pan.
Melt 2 tablespoons of butter in a small dish.  With a pastry brush, brush each well.
Be sure to butter up to the top of the well.
Fill each well with batter.
Pop in a 420-degree oven for 20 minutes.
NEVER open the oven door because that might deflate your popovers.  Just admire from afar.
After 20 minutes, IMMEDIATELY drop the temperature to 350-degrees.  Bake for another 20 minutes.
 OH snap.. they be POPPIN'.
