Caramel Apple Jello Shots

Throwing a Halloween party this weekend?  These Caramel Apple Jello shots will definitely be a hit!  Deliciously sweet and deceptively strong, these Caramel Apple Jello shots taste exactly like a caramel apple!  Recipe courtesy of That's So Michelle via Buzzfeed.
Ingredients:
Fresh lemon juice from 1 lemon
5 Granny Smith apples
1/2 cup water
1 envelope hot chocolate mix (~1 oz.)
1/4 cup sweetened condensed milk
1/4 cup caramel sauce
1 envelope unflavored Knox gelatin
1/4 cup sugar
1 cup vodka

Directions:
Cut the apples in half lengthwise. Using a melon baller, scoop out the inside of the apples, taking care to create a shell of even thickness. Set apple halves into cups of a muffin pan or baking sheet and squeeze or brush lemon juice onto cut apples to reduce browning. Place in fridge until filling is ready.

Directions for filling:
In a medium saucepan, combine water with hot chocolate mix and whisk until the cocoa dissolves. Add sweetened condensed milk and caramel sauce and whisk again to combine. Evenly sprinkle gelatin onto mixture evenly and wait about 2 minutes. Heat the mixture over low-medium heat, whisking occasionally.  Mixture should simmer gently to ensure gelatin is fully dissolved.

Add sugar and simmer gently for about a minute. Turn off the heat and let mixture cool to warm. Add vodka. Transfer to a container with a spout.

Fill each apple cup with caramel jello mixture. Refrigerate a few hours or overnight.

To serve, place apples flesh-down (Jello down) on cutting board. Cut lengthwise in half, then in half again. Trim off any brown parts with a paring knife. Serve immediately.
Wash apples.
Slice lemon.
Squeeeeze.
Cut apples lengthwise.
Core using a melon baller.
Immediately after coring, generously brush apples with lemon juice. 
If you don't brush the apples right after they are cored, browning will occur.  That's just unattractive.
Place apples on a baking sheet or muffin tin and refrigerate.
Pour hot chocolate mix into a saucepan.  Add water and mix.
Add sweetened condensed milk and caramel sauce.
Mix over low to medium heat.
Your mixture will be watery in consistency.  Add sugar and mix again.
Evenly sprinkle the unflavored gelatin on top of the chocolate mixture and leave for two minutes.  Then stir for two minutes and remove from heat to cool.
I chose Pinnacle Whipped vodka to keep the flavor of the filling extra sweet.
Add vodka to the cooled mixture.
Transfer the mixture to a measuring cup. 
Pour filling in each apple.
Refrigerate overnight so the Jell-O sets.
Ta da!  Ready to slice and serve.
Place apple Jell-O-side down and slice.
 
I sliced some apples only the top just in case people only wanted the yummy Caramel-vodka filling.
