Key Lime Pie Recipe

This key lime pie recipe is smooth, creamy, and extremely easy to make!  This quick and simple recipe is one that you will need to add to your recipe box for a refreshing summertime pie.  Plus, the pie bakes in the oven for only 5 to 8 minutes!  Recipe courtesy of
  • 1 (9 inch) prepared graham cracker crust
  • 3 cups sweetened condensed milk (2 cans)
  • 1/2 cup sour cream
  • 3/4 cup key lime juice (~20 key limes)
  • 1 tablespoon grated lime zest (optional)
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine condensed milk, sour cream, and lime juice.  Add lime zest if you are using it.  Mix well and pour into graham cracker crust.
Bake in preheated oven for 5 to 8 minutes, until tiny pinhole bubbles burst on the surface of pie. DO NOT BROWN! Chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.
Any graham cracker crust will do.  I prefer a larger size crust since the recipe prepares a generous amount of filling.
Sweetened condensed milk makes any dessert taste so much better.
Have a spatula ready since the mixture will be extremely sticky.
Pour 2 cans of sweetened condensed milk into a mixing bowl.
Add sour cream.
I always purchase Nellie & Joe's Key West Lime Juice when making this pie.  Squeezing 20 key limes is not an easy task, so save yourself some time and purchase a bottle of this key lime juice!  One bottle is enough to make about two whole pies.
Add key lime juice and mix with a wire whisk until smooth.
Filling should look smooth, thick, and glossy.
Pour filling into graham cracker crust.
Don't be afraid to pour the filling right up to the crust.  The filling will not expand in the oven.
Bake in a 350-degree oven for 5-8 minutes.
Once you start seeing pinhole-sized bubbles at the top of the filling, the pie is done baking.  This should occur between the required 5-8 minute baking time.
Move to a wire rack to cool.
As you can see, the finished pie looks identical to its appearance before it was placed in the oven. 
Decorate with whipped topping.
